California Property Tax

California Property Tax is accessed on the sales price of a property times 1.25% and reaccessed each time you move on the new purchase price.  This makes it virtually impossible for those on a fixed budget to relocate, even if to downsize and survive.  Good News.  I found a loop hole in the tax code for all those over 55 years old at www.ww.law.com/prop60.htm.

Vegan Pineapple Coconut Pie

This is super yummy and quite easy to make

Crust:
    11/2 cups flour
    magarine
    1 tbsp maple syrup
 
Cut magarine into flour add enough until crumbly and like dough
Add maple syrup
Mix well and press into Pam sprayed pie dish. set aside.

Filling:
    1 container tofutti cream cheese
    1 cup maple syrup
    1/2 can plain coconut milk
    about 3/4 cups unsweetened coconut flakes
    1 tsp coconut extract
    dried unsweetened diced pineapple
    (Enough to lightly cover bottom of pie dish, reconstitute with hot water and drain)

Blend cream cheese and maple syrup together. Then fold in coconut milk, coconut flakes and coconut extract. Stir well.  Take pineapple spread around prepared pie dish.  Pour filling over top. Bake at 350 degrees for about 25 minutes or until top seems to have set.

Vegan Tofu Scramble Vegetarian Tofu Scramble

My Vegan Tofu Scramble / Vegetarian Tofu Scramble is a super simple and quick meal, that can be served either with or without dairy.  It may also be prepared in bulk or just for one seating.

1-Chop as much onion as you like

2-Heat med to large non stick skillet with a small amount of oil or non stick spray

3-Add onion to heated skillet

4-Crumble portion of firm tofu (not silken) in skillet

5-Season as desireed.  I personally use SPIKE (found in the natural food dept), garlic salt and salsa, but you can experiment with whatever you wish

6-Break egg into skillet and combine with tofu (optional)
**I add pinquitos (seasoned beans) and avacado, which adds even more substance

7-Finish with a small portion of cheddar cheese (optional)

8-Serve with tortilla chips or toast and potatoes

The entire process takes less than 10 minutes.  The Vegan Tofu Scramble / Vegetarian Tofu Scramble is full of protein, so it won’t leave you hungry and will be sure to satisfy.  Happpy Eats

Living Vegetarian

There are a lot of different reasons people stop eating meat, but it can be difficult to be healthy during the transition. Living vegetarian is not easy.  I am 33 and a lacto ova vegetarian; I have never eaten chicken, fish or any kind, so I have a little bit of experience on this matter. Lacto ova vegetarians eat dairy and eggs (10 grams of fat each), so this helps with protein, but it’s not the only answer. Also you’ll want to limit intake of these items since animal by products contain a different kind of fat, the kind of find that makes you fat. Eat non and 1% low fat dairy and substitute egg whites, but whole eggs are complete protein and you shouldn’t eliminate the yolk entirely.

You will need to replace the protein you were getting from chicken, fish, and meat to feel good and stay healthy. Subsequently, I eat a lot of beans, nuts and tofu (the other white meat), and supplement it with a limited of vegetarian meat. A lot of people, women in particular eliminate essentials like nuts and eggs, because they are higher fat foods, but they are good fats and eating them in moderation is essential to good health. Everyone should eat a lot of vegetables and fruits, but these are a main stay for vegetarians and should comprise a large portion of your diet. I eat salads with non fat dressing at least two to three times a week and I incorporate vegetables into everything.

Cauliflower Casserole

I absolutely love casseroles, because they are so quick and easy, plus you can do other things, since you don’t need to attend to them constantly, like other dishes, plus you can make this the night before and refrigerate overnight.

Also this recipe makes enough for two dishes, so you can even freeze the second for later.

Fast and Fabulous Fruit Custard Tarts

This is simply a fabulous item and can be created in less than 30 minutes, which makes it ideal for entertaining or everday meals.
1 Full Size Pre-made Graham Cracker Crust or Pack of 6 Single Serving Crusts
1 Package (about 3.4 oz) Vanilla Pudding and Pie Filling Mix (Not Instant)
1 Can (12 fl. Oz) Lowfat 2% Evaporated Milk
½ Cup of Lowfat MilkLemon Zest from One Full Lemon 
 Combine Pudding Mix with Lowfat Milk, Evaporated Milk and Lemon Zest
  1. Stirring Until Smooth and Continuing Until Thickened
  2. Refrigerate Until Cooled, then Garnish with Berries of Choice. 
  3. You May also Use Frozen Berries by Creating a Compote by Heating Berries

Apple Hill Cake

Apple Hill Cake

Ingredients:

1 c. brown sugar
1 c. white granulated sugar
1/2 c. oil
2 eggs
4 c. peeled, diced apples
2 tsp. cinnamon
2 tsp. baking powder
2 c. sifted all-purpose flour

 

Thoroughly blend sugars, oil, eggs and apples in one bowl
Sift flour, cinnamon and soda in second bowl.

Then combine ingredients from both bowls.
Bake in greased 9×13 inch pan at 350 degrees for 45 minutes.

Serve it hot, warm or cold. Try it plain, frosted or with whipped cream or ice cream.  Your family will really enjoy this easy Apple Hill Cake, any way you like to present it.

Rasberry Gorgonzola Walnut Salad

I successfully replicated the Melting Pot’s Rasberry Gorgonzola Walnut Salad, which would cost you $6 at the restaurant, whereas my version will be less than a dollar at home.

Rasberry Gorgonzola Walnut Salad

Ingredients:
1 Full Head of Red Leaf Lettuce
Gorgonzola Cheese (as much desired)
Walnuts (as much desired)
Girard’s Nonfat Rasberry Dressing
